A journey through beef like you’ve never experienced before. Rare Cuts is a one-night-only collaboration between acclaimed chef Ian Harrison (formally of Sugo) and front-of-house expert and meat enthusiast Nick Potts (Solera). This five-course dinner explores the art of working with beef, showcasing five distinct approaches:

Rare & Raw – Discover the best cuts for serving beef in its purest form.
On the Bone vs. Off the Bone – A deep dive into how bone-in cooking transforms steak.
The Secondary Cuts – Unlocking the flavour and potential of often-overlooked cuts.
Slow & Steady – The beauty of slow-cooked beef and the cuts that shine.
Wagyu vs. Standard Steak – A head-to-head tasting of two exceptional styles.
For those who love a great pairing, an optional red wine match will be available to complement each course. Join us for an evening of bold flavours, expert craftsmanship, and a true appreciation for all things beef.
